Pancakes

Georgian pancakes, or Machkatebi, are like traditional pancakes but oomfed up, owing to the complexity of flavour lent by the sour cream/yoghurt, and the deeper fry leading to crispy edges
Ingredients
first
- 2 eggs
- 3 tsp sugar
- lime zest
- vanilla essence
- pinch salt
- tbsp oil
- 3-4 Tbsp sour cream/yoghurt
- 1 tsp (levelled) baking soda
- 5-6 Tbsp flour
Directions
- Mix all ingredients in first list until homogenous
- Preheat pan with butter/oil (fairly deep to crisp sides up)
- Stir in Next step ingredients, batter should be loose but not runny
