Georgian pancakes, or Machkatebi, are like traditional pancakes but oomfed up, owing to the complexity of flavour lent by the sour cream/yoghurt, and the deeper fry leading to crispy edges

Ingredients

first

  • 2 eggs
  • 3 tsp sugar
  • lime zest
  • vanilla essence
  • pinch salt
  • tbsp oil
  • 3-4 Tbsp sour cream/yoghurt
  • 1 tsp (levelled) baking soda
  • 5-6 Tbsp flour

Directions

  1. Mix all ingredients in first list until homogenous
  2. Preheat pan with butter/oil (fairly deep to crisp sides up)
  3. Stir in Next step ingredients, batter should be loose but not runny
