Beef needs to be the right cut to become tender. Otherwise braise for 4 hours. Maybe no potatoes cause it makes the gravy too starchy. More oil for better flavour.

Ingredients

  • 1kg Beef
  • 100g Rice
  • Georgian Ostri spices 1 tbsp each
  • Garlic
  • Garlic
  • 2tsp Sugar

To fry

  • 2 Carrot
  • 2 Celery
  • 1/2 onion
  • Tbsp Tomato paste
  • Butter

To garnish

  • Raw garlic
  • Coriander

Directions

  1. Marinate beef in spices, salt, sugar, oil

  2. Chop veggies

  3. Light dusting of flour on beef, sear off in hot pot

  4. Add diced onion to pot and fry, deglaze with some flavourful liquid.

  5. Add water/stock and bring to boil, lower to lowest and simmer for upwards of 5 hours at 82-87 deg.

  6. After beef is pull-apart tender, take off heat

  7. Meanwhile stir-fry vegetables to sweat out with butter, fry with tomato paste, salt.

  8. Mix vegetables back into beef stock

  9. Garnish with coriander and fresh garlic.
