Kimchi from that one youtube tutorial
Ingredients
In a pot
- 1/4 cup or 50g glutinous rice flour
- 2 cups or 400g water
To blend
- 6 garlic
- 3/4 thumb ginger
- 100ml, 2.5g dashi powder
- 1/4 onion
- 1/2 korean pear
- 5tsp sesame oil
- 2tsp sugar
To finish
- 1/4 cup or 70ml fish sauce
- 1.5 cup or 100-120g gochugaru
- 1 cabbage head
- 1 Carrot
- 1 Cucumber
- bunch of garlic shoots
Directions

Prepare cabbage head and salt, leaving to soak for min 2 hours best overnight

Chiffonade all vegetables

Blend all blending ingredients together

in a pot over low heat stir rice flour and water until paste thickens, stir in gochugaru, leave to cool

rinse cabbage heads, leave to drip dry

in a large bowl mix blended ingredients, fish sauce, gochugaru, and flour paste. You should get a thick red mixture.

slather your cabbage leaves in the bowl with the paste.

place in airtight container, leave to ferment outside for 1-2 days then into fridge.
