Ingredients
Base Granola
- 100g rolled oats
- 50g steel cut oats
- 2 Tbsp flaxseed, ground
- 20g wheat germ
- 1 Tbsp Chia seeds
- 85g buttermilk
- 50g melted butter
- 50g sugar
- 20g honey
- 1/2 tsp salt
- Cinammon
- Cardomom
- 1 Egg White
Mix-ins
- 120g pumpkin seeds
- 70g chopped almonds
- 65g pecan
- 1 tsp coconut oil
- pinch salt
- 200g dried fruit
Directions
- Pre-toast grains
- For the Granola: Combine all dry granola ingredients, stir in buttermilk and butter, cover and set aside to let oaks soak ~ 20 mins. After, stir in sugar, salt, and let sit another 30 mins
- Toast nuts from mix-ins in oven about 10 minutes. Transfer to bowl, toss with oil, salt, stir in dried fruit.
- Reduce oven to 150C conventional. Spread oats and bake until uniformly brown, about 100 mins, stirring every 30 mins.
- When brown, remove and let dry. Mix with fruit and nut, return to hot tray, let cool.
