Georgian Lobio

This recipe is for Georgian Lobio, a beautiful, hearty, bean dish
Ingredients

- 400g kidney beans
- 1/2 yellow onion
- 150g walnut
- 5 cloves garlic
- coriander seed, thyme, cayenne pepper, blue fenugreek
- pomegranate juice or sour plum juice
Directions

Soak beans overnight in salted water

Boil for 1 hour with salt, drain and save 2 cups of liquid.

Grind walnuts, mince garlic and cilantro, combine with blue fenugreek, coriander powder, cumin, pepper, paprika

Saute onions until translucent, add mixture from previous step.

Add acid (pomegranate juice), beans, and 1 cup bean liquid.

Add lemon juice, sour plum sauce, to finish

Mash beans and add liquid to achieve desired constistency

Finish with fresh cilantro and lemon juice.
