cucumber salad but this recipe still needs a lot of tweaking. Cucumbers should be brined for 15 minutes and then thoroughly washed and dried.

Marinade

  • 1 cucumber
  • 3 garlic
  • 1 tbsp chinese vinegar
  • 1 tbsp light soy
  • 1 tsp sugar
  • 1/2 tsp salt
  • 1/2 tsp sesame oil
  • 2 tsp lao gan ma
  • 1 tsp chicken powder

Directions

  1. Brine sliced cucumber ~5mm thick with salt for 15 minutes, rinse and set dry
  2. combine all marinade ingredients
  3. combine, top with crushed sesame or peanut.
